if you’ve followed me awhile, you know that I’m all about balancing blood sugar throughout the day. I adore this blueberry muffin smoothie because it also contains protein to help keep my blood sugar regulated. it’s absolutely delicious and tastes just like a blueberry muffin at your favorite local bakery. full of superfoods like organic blueberries, almond butter and collagen, you have a nutrient dense and delightful smoothie in your arsenal.

my husband recently cut out caffeine and I’ve been enjoying experimenting with smoothie combinations. One morning, I came up with a concoction that tasted so similar to a blueberry muffin but didn’t quite hit the note. I love blueberries paired with lemon zest in baking recipes and the lemon zest put the recipe over the top. a delicious blueberry muffin protein smoothie was the end result!

hopefully, you’ll be able to find most of these ingredients lurking in your pantry and freezer.
- frozen blueberries: an antioxidant powerhouse. I use frozen blueberries instead of fresh because it also acts as the ice in the smoothie without watering it down. you can sub fresh blueberries, just add a large handful of ice.
- vanilla protein powder: my current favorite is found here.
- collagen: for healthy hair, skin and nails as well as joint health.
- almond butter: this adds richness and depth of flavor reminiscent of freshly-baked muffins. you could also sub peanut butter or cashew butter.
- nut milk: you can use your favorite- I love three trees brand the best in terms of cleaner ingredients and great taste. you can use almond milk, coconut milk, raw cow’s milk or I used pistachio milk here.
- vanilla: pure vanilla extract adds a cozy bakery treat flavor.
- lemon zest: the secret ingredient- do not skip.
- spices: cinnamon and salt- both enhance flavors in the smoothie.

Blueberry Muffin Protein Smoothie
Ingredients
- 1.5 cups frozen blueberries, plus more to garnish
- 1 serving vanilla protein powder
- 1 serving powdered collagen
- 1 heaping Tablespoon creamy almond butter
- 1 teaspoon lemon zest don’t skip
- Dash of cinnamon
- 1/4 teaspoon pure vanilla extract
- 1 cup nut milk, I used pistachio milk
- 1/4 teaspoon kosher salt don't skip
- a sprinkling of bee pollen, to garnish
Instructions
- In a nutribullet or high-speed blender, combine all ingredients and process until very smooth, 45-60 seconds.
- Add a splash of cold filtered water if you need to thin out mixture.
- Serve immediately garnished with more blueberries and bee pollen.
I’ve had so many breakfast smoothies from meal delivery services and NOTHING compares to how fantastic this blueberry muffin smoothie tastes!! Can’t believe how much flavor the almond butter and lemon zest add to this smoothie! Absolutely fabulous!
