Practice self-doubt and negativity, and it gets lo Practice self-doubt and negativity, and it gets louder❌ Practice self-respect and gratitude, and those become your baseline🪷 That’s neuroplasticity: every time you notice the old pattern and choose differently, even a little, you strengthen a new pathway. A bit rough at first, then easier…and eventually automatic. I’m in the “getting easier” portion and working daily on it👏🏻😉 Confidence is the result, not the starting point🧠 Save this for when you need the reminder.
RECIPE👇🏻 Pumpkin Parsnip Shepherd’s Pie 🥧
Yields RECIPE👇🏻 Pumpkin Parsnip Shepherd’s Pie 🥧
Yields 8 portions Filling: * Drizzle of extra-virgin olive oil * 1 cup yellow onion, diced small * 1 cup carrot, diced small * 1 cup celery, diced small * 1.5 pounds ground beef (85/15 or 80/20) * 2 teaspoons mineral salt * 30 grinds freshly cracked black pepper * 1/2 teaspoon granulated garlic * 3 garlic cloves, minced * 1 tablespoon tomato paste * 1 Tablespoon fresh rosemary minced, plus more for garnish * 1/4 cup pumpkin puree * 1/2 cup dry red wine * 1 cup beef bone broth * 1/2 cup frozen peas * Pumpkin seeds, to garnish Parsnip Pumpkin Puree: * 2 pounds parsnips, peeled and sliced * 2 garlic cloves, peeled * 1 cup pumpkin puree * 1/2 cup canned coconut cream * 1 teaspoon fresh rosemary, minced * 1 teaspoon mineral salt * 20 grinds freshly cracked black pepper * 2 tablespoons butter or ghee Instructions: 1. Preheat the oven to 425°F. 2. Start the puree. Fill a Dutch oven halfway with cool water and add the parsnips and garlic cloves. Bring to a simmer over medium heat and cook until the parsnips are very tender, about 20–25 minutes. 3. Make the filling. While the parsnips cook, heat a drizzle of olive oil in a large, deep, oven-safe sauté pan over medium-high heat. Add the onion, carrot and celery and sauté for 2–3 minutes, until they begin to soften. 4. Push the veggies to the edges of the pan and add the ground beef to the center. As you break up the beef, season it with the salt, pepper, and granulated garlic. Keep breaking it up and stirring it into the veggies until the beef is cooked through. 5. Stir in the minced garlic, tomato paste and rosemary and sauté for 2–3 minutes. Add the pumpkin puree, red wine, and bone broth. Reduce the heat to low and simmer for 10–15 minutes, until thickened. Stir in the frozen peas during the last 2 minutes. (recipe continued in comments👇🏻)
