If food goes in and doesn’t immediately sizzle, you’re steaming- not searing. 🥬 Overcooking vegetables is why people think they hate vegetables. 🍲Let your meal prep cool down completely before adding them to containers and covering- your food will stay fresher, crisp and more vibrant for much longer. 🫐If you keep buying berries in January and wonder why they suck, it’s because they are out of season. Buy citrus, apples and pears instead. 🧼Your kitchen ends in chaos after cooking dinner because you 1. Aren’t pre-chopping and measuring ingredients 2. aren’t reading through the recipe before you start cooking. It’s called mise en place, (everything in its place) and it will make you a more efficient cook. 🧊 Flash-frozen can many times be fresher than “fresh.” Especially regarding seafood, IMO. 🧂Season in layers, not just at the end.
If you only salt at the end, the flavor sits on the food instead of in it. 🧈 Butter burns. Stop cooking everything in butter alone. Use oil to cook, butter to finish. (Except in quick things like eggs) 🍗 Chicken thighs > chicken breasts for flavor and forgiveness. 🔪A dull knife is more dangerous than a sharp one. And yes- it’s slowing you down more than you think… 🧂 If your food tastes flat, it’s usually missing acid, not more salt. Lemon zest, good quality vinegar or something pickled- try that first. 🫶🏻Cooking doesn’t have to be perfect to be nourishing. Progress > performance. Are we wanting a Part 4? Quit adding dairy to your scrambled eggs if you wa Quit adding dairy to your scrambled eggs if you want them airy. A splash of water creates steam for fluffier eggs, dairy tastes great but weighs them down. Cooking white rice with a 2:1 ratio creates wet rice- use 1.5:1 ratio instead. Baked goods *always need salt*. It brings out the flavors in things. If you cook chicken to 165 degrees, you will have dry chicken. Pull it at 150ish degrees and it will continue to cook as it rests. (Breasts/cutlets) If you are garnishing a dish with an herb, make sure that herb is in the dish too. Don’t overcrowd your pan. Crowding = steaming, not searing. Give food space to brown. Yellow onions > white onions for cooking. Each type of onion shines with different usages. Let your steak come to room temp before cooking. Cold meat seizes up in the pan and cooks unevenly. The seasoning will also permeate better too. If you are a baker and not rotating your pan midway through cooking, your baked goods won’t likely cook uniformly. Stop using out of season produce- in season tastes so much better and costs less🤩 Do we need a Part 3???? 🥣
