Spicy Christmas Compote
Ingredients
- 2 medium naval oranges
- 36 oz fresh cranberries
- 1-2 small jalapeños sliced in rounds (dependent on your spice preference)
- 2 medium honeycrisp or gala apples diced small
- 1 Tablespoon Ceylon cinnamon
- Juice and zest of 1 large lemon
- ½ cup plus 1 Tablespoon pure maple syrup
- ½ cup candied ginger minced
- ½ teaspoon mineral salt
Instructions
- Begin by peeling the rind of one of the oranges with a vegetable peeler. Julienne the peel into very thin slices and set aside.
- Next, supreme the oranges by cutting the peel and pith away, leaving only the inner membrane. Cut flesh into 1 inch chunks.
- In a large saucepan, add all ingredients, tossing to coat. Turn heat to medium and stir until mixture has reached a low simmer. Turn heat down to low.
- Simmer on low heat for 30-35 minutes, stirring often, until cranberries have burst and fruit has softened.
- Let cool then package in an airtight container or mason jars and store in the refrigerator.
