Spicy Christmas Compote
This Spicy Christmas Compote is perfect for holiday entertaining and full of cranberries, jalapeños, apples and oranges.
- 2 medium naval oranges
- 36 oz fresh cranberries
- 1-2 small jalapeños sliced in rounds (dependent on your spice preference)
- 2 medium honeycrisp or gala apples diced small
- 1 Tablespoon Ceylon cinnamon
- Juice and zest of 1 large lemon
- ½ cup plus 1 Tablespoon pure maple syrup
- ½ cup candied ginger minced
- ½ teaspoon mineral salt
Begin by peeling the rind of one of the oranges with a vegetable peeler. Julienne the peel into very thin slices and set aside.
Next, supreme the oranges by cutting the peel and pith away, leaving only the inner membrane. Cut flesh into 1 inch chunks.
In a large saucepan, add all ingredients, tossing to coat. Turn heat to medium and stir until mixture has reached a low simmer. Turn heat down to low.
Simmer on low heat for 30-35 minutes, stirring often, until cranberries have burst and fruit has softened.
Let cool then package in an airtight container or mason jars and store in the refrigerator.
