these warmer summer months have me craving *all* of the juicy and luscious stone fruits. nectarines, peaches, pears, plums, cherries and mango are all perfect additions to your summertime smoothies and frozen treats. I decided to do a play on a classic brunch cocktail and turn the signature flavors into a protein-rich and nutrient-dense smoothie with so many nourishing ingredients. plus, my peach Bellini protein smoothie tastes like a dream.

I knew I wanted to make a peach smoothie and brainstormed a slew of possibilities. Peaches & Cream along with peach pie were in the rankings, but this peach bellini protein smoothie stole the show with its addition of fresh mint, local honey and a *touch* of almond extract. almond extract simply makes the peach taste better and have improved flavor dimension. my mom and I fell in love after tasting my round 1 test of this peach bellini rendition and I would take this over a peach bellini cocktail for brunch any day.

hopefully, you’ll be able to find most of these ingredients lurking in your pantry and freezer.
- frozen peaches: the star of the show- you can also use fresh peaches.
- fresh mint: the *supporting* star of the show- a must not skip ingredient.
- fresh banana: adds thickness and creaminess.
- vanilla protein powder: my current favorite is found here.
- collagen: for healthy hair, skin and nails as well as joint health.
- local honey: adds a floral sweetness to enhance the peach flavor.
- coconut milk: the white portion of canned full-fat coconut milk adds the best flavor pairing to emulate peach bellini flavors.
- flavorings: pure almond extract and salt amplify the flavors in this smoothie. Don’t skip these- they truly enhance all the ingredients.
- garnishes: more frozen peach slices and a sprig of fresh mint leaves.

Peach Bellini Protein Smoothie
Ingredients
- 1.5 cups frozen sliced peaches plus more for garnish
- ½ medium banana
- 1.25 cups canned coconut milk the white portion
- 1 serving vanilla protein powder
- 1 serving powdered collagen
- ¼ teaspoon salt
- ¼ cup honey
- ½ teaspoon pure vanilla extract
- ¼ teaspoon pure almond extract
- 1 cup crushed ice
- 20 fresh mint leaves plus 2 sprigs to garnish
Instructions
- In a nutribullet or high-speed blender, combine all ingredients, minus garnishes, and process until very smooth, 45-60 seconds.
- Add a splash of cold filtered water if you need to thin out mixture.
- Serve immediately garnished with a sprig of fresh mint and a peach slice.
We had fresh peaches that we couldn’t finish, so I froze them with plans to make this smoothie. It was incredible! Toddler-approved, mom-approved. The almond extract was the *thing.* So good, Callie!
