the inspiration:

I saw a large sheet pan sugar cookie fruit pizza and it had me thinking. how can we make these with more nourishing ingredients and easier for little hands to enjoy? I used convenient frozen gf browned butter sugar cookies. I also added a white “frosting” made with creme fraiche, fresh lemon, honey and a pinch of salt. add your favorite sliced fruits and you are ready to go!

  • sugar cookie dough: I use this brand to keep the recipe gluten-free with cleaner ingredients. 
  • fresh fruit: use whatever you like! we used fresh sliced peaches, kiwi, fresh berries and cherries.
  • creme fraiche: a think and rich cultured cream originating in France. it has a slight tang which pairs lovely with the sweet cookies and fruit. 
  • fresh lemon: fresh lemon zest brightens the white icing. 
  • honey: adds a touch of floral sweetness to the icing. 
  • a pinch of salt: always add salt to sweets- a sprinkling of salt finishes the icing.

Mini Fruit Pizza Cookies

These Mini Fruit Pizza Cookies are so simple to make, gluten-free and a great activity for the summer months.
Course Dessert

Ingredients
  

  • 1 bag of Cappello's frozen GF Brown Butter Sugar Cookies or 12 slices of sugar cookie dough of your choosing
  • 2 cups assorted sliced fresh fruit I used berries, kiwi, peaches and cherries.

White Frosting:

  • ½ cup creme fraiche
  • 1 teaspoon honey
  • a sprinkling of good salt
  • 1 teaspoon lemon zest

Instructions
 

  • Bake cookies according to package directions. Make sure they are completely cooled before icing and decorating.
  • While cookies are cooling, slice your desired fruit and make the white frosting.
  • In a small bowl, combine the white frosting ingredients until smooth. Chill until cookies are ready to decorate.
  • Ice each cookie individually with white frosting. Finish by adding fresh sliced fruit atop. I like to chill these a bit before serving. You can also make them up to 1 day before and let chill overnight before serving. Enjoy!
