Mini Fruit Pizza Cookies
These Mini Fruit Pizza Cookies are so simple to make, gluten-free and a great activity for the summer months.
- 1 bag of Cappello's frozen GF Brown Butter Sugar Cookies or 12 slices of sugar cookie dough of your choosing
- 2 cups assorted sliced fresh fruit I used berries, kiwi, peaches and cherries.
White Frosting:
- ½ cup creme fraiche
- 1 teaspoon honey
- a sprinkling of good salt
- 1 teaspoon lemon zest
Bake cookies according to package directions. Make sure they are completely cooled before icing and decorating.
While cookies are cooling, slice your desired fruit and make the white frosting.
In a small bowl, combine the white frosting ingredients until smooth. Chill until cookies are ready to decorate.
Ice each cookie individually with white frosting. Finish by adding fresh sliced fruit atop. I like to chill these a bit before serving. You can also make them up to 1 day before and let chill overnight before serving. Enjoy!
