the inspiration:

I would say I was inspired by seasonal produce to create this recipe. honeydew was my first ingredient and then I thought of what other colors, flavors and textures would work well with it. I immediately thought of cucumber and some bright herbs like fresh mint and bright fresco chiles for a bite of spice.

Cut the honeydew rind off first for easier dicing.

honeydew cucumber salsa ingredients:

  • fresh honeydew: look for a melon with a creamy yellow/white exterior and a firm touch, that still gives a bit. you are also looking to find one with a slightly floral and musky aroma. 
  • English cucumber: I prefer this variety- no peeling necessary. 
  • fresno pepper: these look like a red jalapeño- you could also use a regular jalapeño or a Serrano Chile if you like it really spicy. 
  • fresh limes: helps cut through and add acidity to the salsa. we will use both the zest and the juice. 
  • fresh mint: adds a bright floral note. 
  • good quality olive oil: helps round out the salsa and adds depth. this is my current favorite finishing oil. 
  • tajin (optional): if you like an extra hint of smokiness and spice.

this couldn’t be simpler to make. Combine the first 8 ingredients gently with a spoon in a medium bowl. serve chilled with your favorite dipping chips. this would also be wonderful spooned atop grilled fish or chicken.

Fresh Honeydew Cucumber Salsa

This fresh Honeydew Cucumber Salsa is a whimsical, bright and flavorful chunky salsa to serve in the warm months.

Servings 6

Ingredients
  

  • 3 cups honeydew melon diced small
  • 1.5 cups seedless cucumber diced small
  • 1 fresno chile sliced thinly (sub jalapeño or serrano if needed)
  • ¼ cup fresh mint minced, plus more leaves to garnish
  • ½ teaspoon mineral salt
  • ½ teaspoon tajin (optional for more spice)
  • 1 Tablespoon lime zest
  • 2 Tablespoons lime juice
  • ½ teaspoon honey
  • 1 Tablespoon good quality "finishing" olive oil

Instructions
 

  • In a medium bowl, combine all ingredients. Let chill together in the fridge until very cold and flavors have melded, at least 30 minutes.
  • Pour into a serving bowl and garnish with mint leaves and tajin, if desired.
  • Serve with your favorite dip chips.
