  • cottage cheesE: I use full-fat cottage cheese with smaller curds- I love this brand
  • add-ins: you can use whatever egg mix-ins you love- bacon, breakfast sausage, veggies, herbs or cheeses. the possibilities are endless!

how to make:

these fluffy pastured egg protein bites only have a few ingredients and require one simple piece of equipment- a silicone muffin pan. you can find them easily at home goods or on amazon. this is the one I have. 

you will also set up something called a Bain marie. it sounds fancy but it’s really just a dish with simmering water that will release steam beneath the egg bites in the oven and keep them moist and fluffy. you can add the water to a pyrex casserole dish and you are finished! 

add in your fave mix-ins to the silicone muffin cups and top with a simple egg and cottage cheese mixture that blitzes quickly in the blender. you will have protein-rich, nutrient dense and delicious egg bites to enjoy all week long.

  • sausage herb: brown mild italian sausage with minced fresh sage & rosemary (shown)
  • ham & white cheddar: add julienned deli ham with grated sharp white cheddar. 
  • shredded veggie: grate zucchini, sweet potatoes & carrots on the box grater (shown)
  • thyme & goat cheese: add crumbled goat cheese and picked fresh thyme. 
  • bacon gouda: crispy chopped bacon and shredded smoked gouda are a match made in heaven. 
  • sun-dried tomato & kale: olive oil marinated sun-dried tomatoes tossed with julienned kale is a lovely option.

Fluffy Pastured Egg Protein Bites

These Fluffy Pastured Egg Protein Bites are a meal prep wonder- fluffy and perfect to grab and go all throughout the week.

Equipment

  • 1 silicone 12-cup muffin pan

Ingredients
  

  • 8 large eggs
  • 1 1/4 cup full-fat cottage cheese I like Good Culture brand
  • ¾ teaspoon mineral salt
  • 10 grinds of fresh-cracked black pepper
  • 1 cup of optional add ins crumbled bacon, cheese, herbs, veggies, sausage, etc

Instructions
 

  • Preheat oven to 325 degrees. Add water 3/4 the way up a 9x13 casserole dish and place on the bottom oven rack to warm while preparing the other ingredients.
  • To a blender, add eggs, cottage cheese, salt and pepper. Pulse 5-10 times until eggs and cottage cheese are combined and homogenous- do not blend and make mixture frothy.
  • Transfer silicone muffin pan atop a sheet pan and evenly disperse add-ins to the bottoms of each cup. Pour the egg mixture evenly atop each cup.
  • Transfer the pan to the middle or top rack of the oven, above the simmering water. The water will release steam keeping the egg bites fluffy and moist.
  • Bake for 20-25 minutes, rotating the pan 180 degrees halfway through cooking, until egg bites are set and popping out of the cups.
  • Serve immediately or chill completely and store in pyrex to warm for breakfasts. Egg bites will stay fresh throughout the work week kept in a well-sealed container in the fridge.
