one of my very favorite things on this earth is the delicate white cake that is served as the bride’s cake at weddings. it’s often so light and airy with a hint of almond. My mom would always wrap an extra slice of white cake in a napkin to take home with us. she had an equal love for the delicious cake that we only ate on special occasions. I’ve been having fun with these smoothie combinations and decided I definitely needed to try a wedding cake protein smoothie version.

This Wedding Cake Protein Smoothie is a protein, veggie & nutrient-rich frozen treat that tastes just like vanilla almond wedding cake.

inspiration:

my goal in this smoothie was to add a frozen component that would keep the smoothie white and wouldn’t affect the flavor too much. I didn’t want it to taste like banana- so I opted for frozen cauliflower. you can’t taste the cauliflower, but it packs the smoothie with nutrients and makes it thick and slushy. flavor wise, I knew almond extract was integral as well as a sweet component. honey alone was a bit too floral, maple was too distinctive. dates provided the perfect sweetness. cashew butter was the next addition to provide depth of flavor and cake-like flavorings as well as cinnamon and vanilla.

Inspired by my favorite vanilla almond cake flavors- this smoothie is sweetened naturally with dates.

smoothie ingredients:

hopefully, you’ll be able to find most of these ingredients lurking in your pantry and freezer. 

  • frozen cauliflower florets: adds nutrients and thickens but doesn’t influence the flavor. 
  • medjool dates: add the perfect sweetness and thickens the smoothie.
  • vanilla protein powder: my current favorite is found here
  • collagen: for healthy hair, skin and nails as well as joint health. 
  • cashew butter: this healthy dose of fat adds richness and depth of flavor. 
  • nut milk: you can use your favorite- I love three trees brand the best in terms of cleaner ingredients and great taste. you can use almond milk, coconut milk or raw cow’s milk.
  • flavorings: pure vanilla and pure almond extract amplify the flavor along with a pinch of salt. Don’t skip these- they truly enhance all the ingredients. 
  • fun garnishes: I added cubed honeycomb, a sprinkling of dried lavender and a grain-free shortbread cookie to complete the luxurious wedding cake vibes.

Wedding Cake Protein Smoothie

This Wedding Cake Protein Smoothie is a protein, veggie & nutrient-rich frozen treat that tastes just like vanilla almond wedding cake.

Ingredients
  

  • 1 cup unsweetened almond milk
  • 3 pitted large Medjool dates
  • 1 cup frozen cauliflower florets
  • 1 cup ice
  • 1 tablespoon cashew butter
  • ½ teaspoon vanilla extract
  • ½ teaspoon honey
  • ¼ teaspoon almond extract don't skip this
  • ¼ teaspoon kosher salt
  • 1 scoop or 1 serving vanilla protein
  • 1 scoop or 1 serving collagen
  • ¼ teaspoon cinnamon
  • Garnish: a ½ inch square of honeycomb, sprinkling of dried lavender and a grain-free shortbread cookie.

Instructions
 

  • In a nutribullet or high-speed blender, combine all ingredients, (except garnish ingredients), and process until very smooth, 45-60 seconds.
  • Add a splash of cold filtered water if you need to thin out mixture.
  • Serve immediately garnished with honeycomb, a sprinkling of dried lavender and a grain-free shortbread cookie.
