it’s so interesting to think about the specific memories you always remember in your childhood. one of mine was my mother making me a turkey sandwich growing up in Austin, usually on seedy or sourdough bread with mayonnaise, shredded carrots and cherry tomatoes. I wanted to pay homage to this nostalgic summertime treat with my own twist. My summer turkey sandwich is bright and delicious utilizing summer’s bounty and finished with a delicious herby dijonaise.

the inspiration:

I decided to use a gluten-free sourdough, my mom’s signature grated carrot addition, some gorgeous seasonal summer produce and a quick and easy spread for the summer turkey sandwich. you can toast your bread or leave it soft- however you prefer. the nice thing about this sandwich is the flexibility- you can use whatever raw veggies you fancy!

summer turkey sandwich ingredients:

  • sourdough or seeded bread: I use a gluten-free sourdough but my mom always bought sourdough from a local Austin bakery- texas French bread.
  • DELI TURKEY: I like THE ORGANIC DELI TURKEY FROM Costco. THE INGREDIENTS ARE SIMPLE, WHOLE30 AND IT COMES IN AN ECONOMICAL 3-PACK.
  • carrots: I simply grate them freshly ON A box grater.
  • heirloom tomatoes: THE PERFECT SUMMERTIME ADDITION.
  • radish: I SLICE THESE THINLY TO ADD A NICE “BITE” TO THE SANDWICH.
  • fresh avocado: FOR ME, AVOCADO IS NECESSARY ON *ANY* sandwich.
  • Bibb lettuce: I LOVE THESE SWEET, SOFT AND DELICATE LEAVES IN THIS SANDWICH.
  • herb dijonaise: A SIMPLE MIXTURE OF AVOCADO OIL MAYONNAISE, WHOLE GRAIN MUSTARD, FRESH CHIVES, SALT AND PEPPER.

how to make:

PREP the BREAD TO YOUR LIKING. I USED SOFT BREAD BUT IT WOULD ALSO BE DELICIOUS TOASTED. YOU WILL THEN MIX TOGETHER THE SIMPLE DIJONAISE, SLICE AND GRATE YOUR VEGETABLES THEN ASSEMBLE THE SANDWICH WITH DELI TURKEY. EASY PEASY!

  • good quality salt and freshly-cracked black pepper to taste
  • a drizzling of good quality extra virgin olive oil
  • 1/2 cup radish sliced thin
  • 1/2 large just ripe avocado sliced thin

Herby Dijonaise:

  • 2 Tablespoons avocado oil mayonaise I prefer Chosen Foods brand

  • 1 Tablespoon fresh chives sliced thinly

  • Set bread aside and prepare the Herby Dijonaise. In a small bowl, combine all ingredients. Set aside.
  • Add your vegetables to a plate to assemble sandwiches. Drizzle avocado and heirloom tomato with olive oil and season with salt and pepper.
  • To assemble two sandwiches, add a liberal amount of Herby Dijonaise to all four slices of bread.
  • On two slices, add three slices of folded turkey followed by bibb lettuce, avocado slices, heirloom tomato slices, sliced radish and shredded carrots.
  • Add remaining slices of bread atop each sandwich and carefully slice in half with a serrated knife. Enjoy!
