Summer Turkey Sandwich
This Summer Turkey Sandwich is an homage to the one my mom made me through childhood with shredded carrots and seasonal veggies.
- 4 slices sourdough or seeded bread
- 6 slices of sliced deli turkey
- 2 medium carrots grated on a box grater
- 4 slices baby bibb lettuce
- 1 small heirloom tomato sliced
- good quality salt and freshly-cracked black pepper to taste
- a drizzling of good quality extra virgin olive oil
- 1/2 cup radish sliced thin
- 1/2 large just ripe avocado sliced thin
Herby Dijonaise:
- 2 Tablespoons avocado oil mayonaise I prefer Chosen Foods brand
- 1 Tablespoon whole grain mustard
- 1 Tablespoon fresh chives sliced thinly
- a large sprinkling of good salt
- 5 cracks of freshly-cracked black pepper
Begin by toasting your bread in a toaster or under a broiler to your liking. You can also keep bread soft if you prefer.
Set bread aside and prepare the Herby Dijonaise. In a small bowl, combine all ingredients. Set aside.
Add your vegetables to a plate to assemble sandwiches. Drizzle avocado and heirloom tomato with olive oil and season with salt and pepper.
To assemble two sandwiches, add a liberal amount of Herby Dijonaise to all four slices of bread.
On two slices, add three slices of folded turkey followed by bibb lettuce, avocado slices, heirloom tomato slices, sliced radish and shredded carrots.
Add remaining slices of bread atop each sandwich and carefully slice in half with a serrated knife. Enjoy!
