I love a great turkey burger in the summer- full of flavor with great toppings. growing up in Austin, my mom would get those little everyday by Martha Stewart cookbooks in the mail. martha had a simple turkey burger with scallions and gruyere that quickly became a staple. this recipe is my ode to Martha. the burgers are super flavorful with fresh herbs, nutty gruyere and a touch of lemon. I build them simply with a juicy heirloom tomato, fresh basil and bibb lettuce- you could also add avocado or pickles for an amazing combo.

- ground turkey I use a lean ground turkey in this recipe- a 93/7 ratio. I repeat- I repeat- do not buy extra lean. You’ll thank me later.

how to make:
this dish is very simple to execute. Begin by seasoning, mixing and forming the turkey burger patties. next, sear burgers in a pan to brown. add some freshly-grated gruyere cheese then finish in the oven for a few minutes. to assemble, add avocado oil mayonnaise to both sides of burger bun followed by bibb lettuce, burger patty, tomato and basil. enjoy!

Scallion Gruyere Turkey Burgers
Ingredients
- 2 lbs lean ground turkey do not use extra lean
- 2 Tablespoons whole grain mustard
- ⅓ cup scallions sliced thinly
- ¼ cup gruyere grated with a microplane, plus more to grate atop
- ½ teaspoon granulated garlic
- 2 Tablespoons parmesan grated
- ¾ teaspoon mineral salt
- 1 teaspoon lemon zest
- 20 grinds of freshly-cracked black pepper
- 1 teaspoon avocado oil
- butter lettuce for serving
- sliced heirloom tomatoes for serving
- fresh basil leaves for serving
- mayonnaise and whole grain mustard for serving
Instructions
- Preheat oven to 400 degrees. To a large mixing bowl, add the 9 ingredients to form the turkey burgers.
- Divide and form into 6 uniform patties and place on a parchment-lined sheet pan.
- Preheat a grill pan over medium-high heat for 3 minutes. Add avocado oil and 2-3 burgers to fit the pan.
- Cook, in batches, for 3-4 minutes per side until golden browned. Transfer back to sheet pan and top each burger with your desired amount of grated gruyere.
- Bake burgers for an additional 4-5 minutes to finish cooking through.
- To assemble burgers, add mayonnaise to one bun half and whole grain mustard to the other.
- Add turkey burger, a slice of heirloom tomato, Bibb lettuce leaves and basil leaves. Serve immediately and enjoy!
