chewy dates are absolutely delicious on their own but I had to jump on the viral date bark bandwagon. I’ve made chocolate barks many times in my personal cheffing and catering years, but this version may very well top them all- plus, it’s made with clean ingredients and is refined sugar-free. this candy bar date bark is chewy, gooey, crunchy, creamy and has the perfect amount of sweetness. 

how to make “candy bar” date bark:

this simple candy bar date bark incorporates chewy, sugary dates with creamy and buttery cashew butter, smooth and luscious dark chocolate, a touch of salt to add dimension and bring out the flavors, as well as edible flower petals to add a touch of color and whimsy. 

it’s very simple to remove the small pit from the date- they look like little pecan halves and you simply cut or tear a slit lengthwise down the date, and remove the pit. these organic joolies dates are particularly plump and moist so they make the next step very simple- flattening the dates out and pressing on a parchment-lined sheet pan. I assembled the dates in a rectangle, interior down, then pressed them down uniformly.

after a drizzle of cashew butter and melted dark chocolate with my favorite crushed chocolate-covered cashews and a sprinkling of pink Himalayan salt and edible flower petals, this “candy bar” date bark comes to life!

final steps- freeze for a bit to harden everything then cut into squares and enjoy. Pair it with my fresh vanilla hemp milk and you’ll slowly float away in bliss!

Ingredients
  

  • 12 oz dates pits removed
  • 1/4 cup cashew butter warmed
  • 1/4 cup dark chocolate melted
  • 1/4 cup chocolate-covered cashews chopped
  • sprinkling of pink Himalayan salt
  • sprinkling of edible flower petals optional

Instructions
 

  • Line a small baking sheet or tray with parchment paper, assemble your pitted dates in a rectangle, interior side down, and flatten down into a uniform rectangle.
  • Drizzle with cashew butter, distributing all across the dates.
  • Drizzle with melted dark chocolate, distributing all across the dates.
  • Finish with a sprinkling of pink Himalayan salt and edible flower petals for a special touch.
  • Transfer sheet pan to freezer and freeze until hardened, 30 min.
  • Cut into squares and serve. Keep leftovers in the freezer until ready to eat.
