I remember specifically when I first made this side dish for my son- he looked at me emphatically and said, “what’s this? can I have more?!.” this ranch roasted cauliflower is probably my simplest recipe to date and a side dish that the entire family will love. I use dry ranch seasoning spices such as dried dill, onion powder and granulated garlic to emulate those ranch flavors. I hope you try this soon as a new side dish option.

the inspiration:

In an effort to liven up side dishes, I came up with this idea when I noticed my son take an interest in cauliflower. I needed to make a dry ranch seasoning for ranch dressing and it made me think- what vegetable would this be good on? Cauliflower was the easy answer because its a blank canvas, cooks quickly and is nutritious. this ranch seasoning would also work well on roasted white sweet potatoes, sprinkled in baked potatoes or atop broccoli. delicious!

Ranch Roasted Cauliflower

This Ranch Roasted Cauliflower is a cinch to make, addictive to eat, and a fun new side dish that the entire family will devour.

Servings 4

Ingredients
  

  • 1 large head of cauliflower cut into individual florets
  • 2 Tablespoons olive oil
  • ½ teaspoon granulated garlic
  • ½ teaspoon onion powder
  • ½ teaspoon dried dill
  • ¾ teaspoon mineral salt
  • 20 grounds of freshly-cracked black pepper

Instructions
 

  • Preheat oven to 400 degrees. Line a sheet pan with parchment paper. To the sheet pan, add cauliflower florets, olive oil and spices. Toss until well coated and pat down in a single layer.
  • Bake for 20 minutes until cauliflower is beginning to brown and caramelize. Remove from oven and toss cauliflower then bake an additional 5-10 minutes until browned and softened.
