Summer is here and the fruit is at its peak. fresh watermelon and berries are all perfect on their own, but spectacular in this mojito fruit salad. all the jewel-toned berries, watermelon and grapes come together with classic mojito flavors like fresh lime, mint and a touch of salt. enjoy this fruit salad ice cold served al fresco for the perfect easy summer entertaining dish.

the inspiration:
this was inspired by a best-seller at my organic grab & go shop. we sold little pint sizes of this delicious salad in the summer and I made this salad often for summer caterings as well. although I like the jewel-tones for aesthetic purposes, this would be absolutely delicious with summer stone fruits mixed in. fresh plums, peaches or apricots would also pair beautifully with the quintessential mojito flavors.

mojito fruit salad ingredients:
- fresh watermelon: the star of the show! make sure to dice the watermelon small so it’s uniform with the berries.
- fresh berries: I used all four berries: strawberries, blackberries, blueberries and raspberries.
- red grapes: sliced grapes add a great pop of texture and sweetness.
- fresh lime: we are using lime juice and zest in this recipe. I also use thinly-sliced lime rounds to garnish the salad.
- fresh mint: the classic mojito flavor! don’t skip this herbaceous addition.
- honey: deepens the flavor of the fruits. I’m currently obsessed with this brand’s honey.
- mineral salt: brings out all the flavors in the salt- just a sprinkling.
- edible flowers: these are optional but add the perfect finishing touch.

how to serve:
this mojito fruit salad can be served a few different ways either for entertaining, a simple dinner or a shower:
- weekend brunch: serve the fruit salad alongside my caramelized leek, ham & asparagus strata and my paleo cinnamon roll snacking cake.
- sunday supper: serve fruit salad alongside my summertime beef picadillo with my orange peel guacamole and tortilla chips.
- bridal shower: serve fruit salad with my mom’s apple lemon tuna salad with crackers alongside my roasted eggplant & beet protein dip.
- outdoor summer bbq: serve fruit salad with grilled burgers & fixings alongside my greek salad with pistachios.



Mojito Fruit Salad
Ingredients
- 3 cups seedless watermelon cubed small
- Juice and zest of 1 medium lime plus sliced lime rounds for garnish
- 1 Tablespoon honey
- 2 Tablespoons fresh mint leaves chopped finely
- Sprinkling of mineral salt
- 1 cup strawberries hulled and quartered
- 1 cup blackberries
- 1 cup blueberries
- 1 cup raspberries
- edible flowers to garnish
Instructions
- To a large bowl, add the cubed watermelon.
- Add lime juice and zest, honey, and salt. Toss gently.
- Stir in strawberries, blackberries and blueberries. Chill until ready to serve.
- To serve, gently fold in raspberries.
- Garnish with edible flowers and lime rounds. Serve very chilled. Enjoy!
