Mojito Fruit Salad

This Mojito Fruit Salad is the perfect fruit salad for the summer and was a best-seller at my organic grab & go shop.
Course Salad
Servings 8

Ingredients
  

  • 3 cups seedless watermelon cubed small
  • Juice and zest of 1 medium lime plus sliced lime rounds for garnish
  • 1 Tablespoon honey
  • 2 Tablespoons fresh mint leaves chopped finely
  • Sprinkling of mineral salt
  • 1 cup strawberries hulled and quartered
  • 1 cup blackberries
  • 1 cup blueberries
  • 1 cup raspberries
  • edible flowers to garnish

Instructions
 

  • To a large bowl, add the cubed watermelon.
  • Add lime juice and zest, honey, and salt. Toss gently.
  • Stir in strawberries, blackberries and blueberries. Chill until ready to serve.
  • To serve, gently fold in raspberries.
  • Garnish with edible flowers and lime rounds. Serve very chilled. Enjoy!
