sometimes big hamburgers or cheeseburgers with a bun can be overwhelming for younger kiddos so I’ve found a simple & nutritious complete dinner than my son will gobble down. these mini beef cheddar sliders & fries come together in about 30 minutes and are family-friendly. it’s a high-protein and nutrient dense feel that will leave everyone with a happy tummy.

  • ground beef: I use 85/15 ground beef for juicy patties. 
  • whole grain mustard: my first secret ingredient for delicious burger patties. 
  • coconut aminos: my second secret ingredient for delicious burger patties. 
  • sharp cheddar cheese: I used sharp cheddar on the sliders but use what you love!
  • Japanese sweet potatoes or white-skinned sweet potato: I love how these have the benefits of sweet potatoes but aren’t quite as sweet as their orange predecessor. they are sweet, savory and delicious. 
  • spices: granulated garlic, mineral salt and pepper are all you need!

White-skinned sweet potatoes make the best sweet potato fry.

how to make:

this dish is simple to execute after a few simple steps. first, you will slice, season and roast your sweet potatoes. next, season and form your slider patties and sear in the pan. you’ll top with cheese and finish in the oven just as your sweet potato fries are finishing. I also added some frozen peas that I simmered with bone broth and butter if you want to add a simple green veggie.

  • shown: bunless with steamed peas (I also served sugar-free ketchup on the side).
  • kids birthday party: serve in little potato slider rolls with a basket of fries and fruit salad. 
  • sunday supper: serve patty-melt style on toasted bread alongside fries and a large green salad with my mini fruit pizza cookies for dessert.

Mini Beef Cheddar Sliders & Fries

These Mini Beef Cheddar Sliders & Fries are a delicious, simple and versatile combination that the entire family will love.

Ingredients
  

  • 1 pound 85/15 ground beef
  • 2 Tablespoons whole grain mustard
  • 1 Tablespoon coconut aminos
  • ¼ teaspoon granulated garlic
  • ¾ teaspoon mineral salt
  • 20 turns of freshly-cracked black pepper
  • 1 teaspoon olive oil
  • 6 oz sharp blocked yellow cheddar sliced in thick slices

Baked Sweet Potato Fries:

  • 3 white-skinned sweet potatoes cut into fry matchsticks (1 inch thick)
  • 1.5 Tablespoon olive oil
  • ½ teaspoon granulated garlic
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried dill
  • ½ teaspoon mineral salt
  • 20 turns of freshly-cracked black pepper

Instructions
 

  • Preheat oven to 400 degrees. Begin by roasting the sweet potato fries.
  • Line a sheet pan with parchment paper. Add sweet potato matchsticks, olive oil and spices- toss until well combined. Arrange in an even layer and bake on the middle rack for 20 minutes. Remove from oven, toss with tongs, and roast an additional 5-10 minutes until fries are tender and browned. Set aside.
  • Meanwhile, prepare sliders. In a medium bowl, add ground beef, mustard, coconut aminos, granulated garlic, salt and pepper. Form into 8 uniform patties.
  • In a large, oven-friendly saute pan, heat pan over medium-high heat for 2-3 minutes. Add olive oil and sliders, carefully not to crowd pan. You may need to do this in two batches.
  • Leave sliders undisturbed for 2-3 minutes then flip and cook an additional 1-2 minutes. Top sliders with cheese in the pan and transfer to oven to melt cheese and finish cooking burgers, 3-4 minutes.
  • Serve sliders with sweet potato fries and enjoy! I also added frozen peas warmed in bone broth with pastured butter.
