- ground chicken or turkey: make sure you are using a 93% lean and NOT extra lean or you will have hockey puck meatloaves.
- grated parmesan cheese
- tomato paste
- an egg
- aromatics: fresh garlic and basil add complexity to the filling.
- spices: Italian seasoning and granulated garlic season the meatloaves along with salt & pepper.
- GF Italian breadcrumbs
- tomato paste: this helps add depth of flavor to our meatloaf filling.
- fresh herbs: I used a combination of fresh thyme and fresh basil.
- jarred marinara: a great convenient item to have on hand. I love this one.
- fresh mozzarella: fresh mozzarella slices finish these nostalgic chicken parmesan flavors.

these gluten-free chicken parmesan meatloaves are quick and easy to get on the dinner table but fit for a comforting, slow-cooked meal vibe. begin by adding the ground chicken in a bowl with the spices, herbs, cheeses and aromatics. mix well but keep mixture light as to not compact them. form into mini football shapes and add to a parchment-lined sheet pan, top with jarred marinara and bake to cook through. finally, add the fresh mozzarella on top and broil several minutes. serve topped with fresh basil for a delicious and hearty Italian meal.

- large sunday supper: serve mini meatloaves with roasted potatoes, green beans and a caprese salad.
- leftover sandwich: serve cold leftover mini meatloaf slices on toasted gf bread with avocado oil mayonnaise, shaved red onion & sliced Roma tomatoes. DELISH.

Gluten-Free Chicken Parmesan Meatloaves
Ingredients
- 2 pounds ground chicken 93% lean *not extra lean*
- ½ cup grated parmesan cheese
- ¼ cup Italian breadcrumbs I used GF
- 1 teaspoon fresh garlic minced
- 1 teaspoon tomato paste
- 1 egg
- ¼ cup fresh herbs chopped (I used fresh basil and thyme, plus more to garnish)
- 2 teaspoons mineral salt
- 20 grounds of freshly-cracked black pepper
- ½ teaspoon granulated garlic
- ½ teaspoon Italian seasoning
- 1 cup prepared jarred marinara
- 6 oz fresh mozzarella sliced in 8 rounds
Instructions
- Preheat oven to 425 degrees. Line a sheet pan with parchment paper.
- In a large bowl, add all meatloaf ingredients except for marinara and fresh mozzarella. Lightly combine well with your hands, careful not to compact the mixture. Form into 8 mini football shaped meatloafs and add to sheet pan.
- Top each meatloaf with a large spoonful of marinara, spreading to edges.
- Bake meatloaves on the middle rack for 15 minutes.
- Remove meatloaves from oven and add sliced fresh mozzarella atop each.
- Change oven temperature to broil and return meatloaves to middle rack of oven for 5-7 more minutes, watching occasionally, until tops are lightly golden and bubbling, careful not to burn. Garnish meatloaves with more fresh herbs like basil or thyme and enjoy!
