Cuisine Italian
- 2 pounds ground chicken 93% lean *not extra lean*
- ½ cup grated parmesan cheese
- ¼ cup Italian breadcrumbs I used GF
- 1 teaspoon fresh garlic minced
- 1 teaspoon tomato paste
- 1 egg
- ¼ cup fresh herbs chopped (I used fresh basil and thyme, plus more to garnish)
- 2 teaspoons mineral salt
- 20 grounds of freshly-cracked black pepper
- ½ teaspoon granulated garlic
- ½ teaspoon Italian seasoning
- 1 cup prepared jarred marinara
- 6 oz fresh mozzarella sliced in 8 rounds
Preheat oven to 425 degrees. Line a sheet pan with parchment paper.
In a large bowl, add all meatloaf ingredients except for marinara and fresh mozzarella. Lightly combine well with your hands, careful not to compact the mixture. Form into 8 mini football shaped meatloafs and add to sheet pan.
Top each meatloaf with a large spoonful of marinara, spreading to edges.
Bake meatloaves on the middle rack for 15 minutes.
Remove meatloaves from oven and add sliced fresh mozzarella atop each.
Change oven temperature to broil and return meatloaves to middle rack of oven for 5-7 more minutes, watching occasionally, until tops are lightly golden and bubbling, careful not to burn. Garnish meatloaves with more fresh herbs like basil or thyme and enjoy!
