the inspiration:

I’m continuing to focus on shortcut desserts that make it easy for busy lifestyles, using shortcuts made from real Whole Foods and nourishing ingredients. this brownie pie idea started after making some of our favorite brownies from a boxed grain-free mix. I thought it would be so delicious baked in a pie crust. also while planning my February content, I was thinking about the dreamy flavor combination of chocolate and cherries and this idea was born.

Black Forest brownie pie ingredients:

  • simple mills boxed brownie mix: you can find this mix online at thrive market, Whole Foods, central market, target and more!
  • cocktail cherries: we use the juice in the brownie batter and garnish the pie with the cherries. 
  • pastured eggs
  • real vanilla: you can use either pure vanilla bean extract or vanilla bean paste for the brownies and the whipped cream.
  • almond extract: a match made in heaven with cherries and helps deepen the flavor. 
  • liquid coconut oil or avocado oil: makes the cake extra moist.
  • gf frozen pie crust: this is the brand I used. 
  • heavy whipping cream: for fresh whipped cream.
  • fresh nutmeg: flavors the whipped cream.

how to make:

begin by removing the frozen pie crust from the freezer and add to a parchment lined baking sheet. preheat the oven. next, prepare the brownie batter with the simple boxed mix and add-ins along with our secret ingredients: the almond extract and cocktail cherry juice. Add the batter to the par-baked pie and bake until the center is just set- careful not to overbake. while brownie pie is cooling, make the fresh whipped cream. Serve the brownie pie sliced topped with mounds of whipped cream, more fresh nutmeg and cocktail cherries.

GF Black Forest Brownie Pie

This GF Black Forest Brownie Pie is so simple and bursting with a fudge brownie center, cocktail cherries and fresh whipped cream.

Ingredients
  

  • 1 frozen unbaked GF pie crust I used Maine Pie Co. brand
  • ½ cup coconut oil
  • 1 Tablespoon Luxardo cherry brine
  • 2 Tablespoons water
  • 2 large eggs
  • ¼ teaspoon almond extract
  • 1 box of Simple Mills brownie mix
  • luxardo cherries to ganish

Whipped Cream:

  • 1 pint heavy whipping cream
  • 1 teaspoon vanilla bean paste
  • 2 teaspoons Luxardo cherry brine
  • 1 Tablespoon honey
  • Pinch of mineral salt

Instructions
 

  • Preheat oven to 350 degrees. Line a sheet pan with parchment paper and add the frozen pie crust. Set aside.
  • In a large bowl, whisk together the coconut oil, cherry brine, water, eggs and almond extract. With a spatula, slowly add in brownie mix and mix until well combined.
  • Carefully transfer batter into frozen pie crust, smoothing evenly. Bake on the middle rack for 40-45 minutes, until crust is golden brown and brownie pie is puffed and just springs back to the touch.
  • Set aside to cool then chill completely in the refrigerator. You can also serve warm but cherry flavor is most pronounced when cold.
  • Meanwhile, make whipped cream. With a hand mixer or in a stand mixer, beat together ingredients until firm peaks emerge. Chill until ready to serve.
  • Serve pie served chilled topped with plenty of whipped cream and a few luxardo cherries with syrup dripping off the sides. Enjoy!
