GF Black Forest Brownie Pie
This GF Black Forest Brownie Pie is so simple and bursting with a fudge brownie center, cocktail cherries and fresh whipped cream.
- 1 frozen unbaked GF pie crust I used Maine Pie Co. brand
- ½ cup coconut oil
- 1 Tablespoon Luxardo cherry brine
- 2 Tablespoons water
- 2 large eggs
- ¼ teaspoon almond extract
- 1 box of Simple Mills brownie mix
- luxardo cherries to ganish
Whipped Cream:
- 1 pint heavy whipping cream
- 1 teaspoon vanilla bean paste
- 2 teaspoons Luxardo cherry brine
- 1 Tablespoon honey
- Pinch of mineral salt
Preheat oven to 350 degrees. Line a sheet pan with parchment paper and add the frozen pie crust. Set aside.
In a large bowl, whisk together the coconut oil, cherry brine, water, eggs and almond extract. With a spatula, slowly add in brownie mix and mix until well combined.
Carefully transfer batter into frozen pie crust, smoothing evenly. Bake on the middle rack for 40-45 minutes, until crust is golden brown and brownie pie is puffed and just springs back to the touch.
Set aside to cool then chill completely in the refrigerator. You can also serve warm but cherry flavor is most pronounced when cold.
Meanwhile, make whipped cream. With a hand mixer or in a stand mixer, beat together ingredients until firm peaks emerge. Chill until ready to serve.
Serve pie served chilled topped with plenty of whipped cream and a few luxardo cherries with syrup dripping off the sides. Enjoy!
