GF Black Forest Brownie Pie

This GF Black Forest Brownie Pie is so simple and bursting with a fudge brownie center, cocktail cherries and fresh whipped cream.

Ingredients
  

  • 1 frozen unbaked GF pie crust I used Maine Pie Co. brand
  • ½ cup coconut oil
  • 1 Tablespoon Luxardo cherry brine
  • 2 Tablespoons water
  • 2 large eggs
  • ¼ teaspoon almond extract
  • 1 box of Simple Mills brownie mix
  • luxardo cherries to ganish

Whipped Cream:

  • 1 pint heavy whipping cream
  • 1 teaspoon vanilla bean paste
  • 2 teaspoons Luxardo cherry brine
  • 1 Tablespoon honey
  • Pinch of mineral salt

Instructions
 

  • Preheat oven to 350 degrees. Line a sheet pan with parchment paper and add the frozen pie crust. Set aside.
  • In a large bowl, whisk together the coconut oil, cherry brine, water, eggs and almond extract. With a spatula, slowly add in brownie mix and mix until well combined.
  • Carefully transfer batter into frozen pie crust, smoothing evenly. Bake on the middle rack for 40-45 minutes, until crust is golden brown and brownie pie is puffed and just springs back to the touch.
  • Set aside to cool then chill completely in the refrigerator. You can also serve warm but cherry flavor is most pronounced when cold.
  • Meanwhile, make whipped cream. With a hand mixer or in a stand mixer, beat together ingredients until firm peaks emerge. Chill until ready to serve.
  • Serve pie served chilled topped with plenty of whipped cream and a few luxardo cherries with syrup dripping off the sides. Enjoy!
