citrus season is truly one of the bright additions I adore after a little holiday depression kicks in after putting up the christmas decor. fresh ruby red grapefruits from the Texas valley are ripe for the taking and are heaven paired with buttery fresh avocados. this grapefruit avocado salad with hemp seeds is myriad of textures and flavors, and oh-so-simple to make. *this post may include affiliate links*
the inspiration:
this salad reminds me of my childhood. grapefruit and avocado are a match made in heaven and made the perfect salad paired with hearty chili or homemade tamales at our winter family get-togethers. along with the usual suspects I’ve made a bright and luxurious hemp seed and pink peppercorn vinaigrette and added crunch with fresh pistachios. fresh mint leaves and flaky sea salt finish off this exquisite salad.
grapefruit avocado salad ingredients:
- ruby red grapefruit: the star of the show.
- fresh avocado: the supporting act.
- radicchio: adds texture and perfect bitterness.
- champagne vinegar: a vibrant pop of flavor in the vinaigrette.
- good olive oil: use one of your nicer olive oils for this vinaigrette. this is my fave for homemade dressings and also includes the vinegar.
- honey: adds a pop of sweetness to accentuate the grapefruit.
- pistachios: add a nice crunch factor and pop of color.
- pink peppercorns: dried berries from a tree with a fruit and peppery flavor. surprisingly not a peppercorn at all.
- fresh mint: the perfect herbaceous finisher to the salad.
how to serve:
this grapefruit avocado Salad can be served a few different ways either for entertaining, a simple dinner or a shower:
- bridal shower: serve grapefruit avocado alongside my curried chicken salad with dried apricots, warmed mini naan bread and my cacio e pepe deviled eggs.
- gal’s dinner: serve grapefruit avocado salad alongside my beef picadillo stuffed in roasted white sweet potato halves.
- weeknight dinner: serve grapefruit avocado salad alongside my stuffed beef poblano & “rice” bowl.
- dinner party: serve grapefruit avocado salad alongside grilled steak fajitas with my orange peel guacamole.
Grapefruit Avocado Salad with Hemp Seeds
Ingredients
- 2 ruby red grapefruits
- 1 small head purple or pink radicchio
- 1 large or 2 small just ripe avocados
- flaky sea salt to garnish
- 1/2 cup raw pistachios
- fresh mint leaves to garnish
Hemp Dressing:
- ½ teaspoon hemp seeds
- 2 Tablespoons champagne vinaigrette
- 1 Tablespoon honey
- ¼ teaspoon pink peppercorns roughly crushed
- 2 Tablespoons good quality finishing olive oil
- ¼ teaspoon mineral salt
Instructions
- Begin by preparing the radicchio and grapefruit. Tear away the first few exterior darker leaves of the radicchio. Slice radicchio in half through the core. Cut out the core on each side then very thinly julienne the radicchio. Set aside.
- Next, prepare the grapefruit. Slice off the top and bottom of the grapefruit.
- Stand the grapefruit upright on the cutting board. Starting at the top of the grapefruit, guide your knife down to the base, curving the knife with the shape of the fruit. Continue all the way around the fruit until all of the rind and pith is removed. Use a paring knife to slice along the inside of the membranes, slide out your supremed grapefruit wedges and set aside.
- Next, prepare the vinaigrette. Add all ingredients to a small mason jar and shake vigorously.
- Finally, halve the avocado and remove the core. Carefully remove the flesh from the skin and set flesh face down on the cutting board then cut into lengthwise slices.
- To assemble the salad, add the radicchio to the bottom of the platter in a circle. Next, in a circular pattern, alternate the grapefruit and avocado slices. Drizzle vinaigrette with a spoon all atop, saving some to finish.
- Garnish with flaky salt, pistachios and mint leaves. Drizzle with more vinaigrette to finish and enjoy!
