our family continues to loves protein-rich breakfast that are easy to meal prep and kid-friendly. this recipe uses my fave shortcut of boxed grain-free waffle mix with some snickerdoodle reminiscent flavors and added protein. these grain-free snickerdoodle protein waffles will be your new favorite breakfast go-to to meal prep. the entire recipe is gluten-free, grain-free, dairy-free and refined sugar-free for optimal blood sugar regulation as well.

the inspiration:
I often feel conflicted about whether parts of my life or routine seem too simple or even mundane to share with my followers. I never considered sharing a simple recipe I whipped up with a boxed mix and didn’t think it would interest anyone. boy, was I wrong.
after posting an instagram story briefly showing one of these delicious waffles, I received so many messages of intrigue to learn about this recipe. I wanted to add a fun and whimsical flavor profile to the dish so I went with a snickerdoodle vibe- full of vanilla protein powder, tons of Ceylon cinnamon and a pinch of salt.

snickerdoodle waffle ingredients:
- simple mills grain-free pancake mix: I use this delicious pancake/waffle mix year round. this recipe yields 14-16 individual waffles. I use a mini waffle iron from amazon but I’m searching for a non toxic version. let me know if you have a favorite!
- vanilla protein powder: this is my current favorite brand.
- coconut oil: makes the waffles moist and tender.
- almond milk: I use the vanilla bean almond milk from three trees made with only four ingredients.
- pastured eggs: provide structure to the waffles.
- ceylon cinnamon: adds this delicious snickerdoodle flavor.

how to make:
this recipe comes together quickly and simply in one bowl making it ideal for meal prepping. you will combine the wet ingredients first, then fold in the dry ingredients to form the waffle batter. you will then add a scant 1/4 cup of batter to a preheated individual waffle iron and let cook, right around 2 minutes. you can always open it prematurely to check the color.
serve immediately with a drizzle of honey and cinnamon. alternately, you can freeze waffles on a sheet pan, as shown, then transfer to a plastic or silicone bag to store in the freezer.



Grain-Free Snickerdoodle Protein Waffles
Ingredients
- 5 large eggs
- ⅔ cup almond milk
- 3 Tablespoons coconut oil, melted
- 2 scoops/servings of Vanilla Protein Powder
- 1 box of Simple Mills grain-free pancake & waffle mix
- 1 teaspoon Ceylon cinnamon
- ⅛ teaspoon mineral salt
Instructions
- In a medium bowl, whisk together eggs, almond milk and coconut oil.
- Add protein powder and whisk until smooth. Add entire box of grain-free waffle mix and mix until thoroughly combined with a spatula.
- Plug in mini waffle iron to warm. Spray with coconut oil spray and add a bit less than a ¼ cup of batter per waffle.
- Cook for 2-3 minutes until golden brown.
- Serve immediately drizzled with honey and cinnamon or freeze waffles on a sheet pan.
- When frozen, transfer to a silicone storage bag or ziploc. Reheat from frozen in toaster oven, air fryer or microwave.
