Grain-Free Snickerdoodle Protein Waffles
These Grain-Free Snickerdoodle Protein Waffles are the perfect meal prep recipe for a high-protein and nourishing breakfast option.
- 5 large eggs
- ⅔ cup almond milk
- 3 Tablespoons coconut oil, melted
- 2 scoops/servings of Vanilla Protein Powder
- 1 box of Simple Mills grain-free pancake & waffle mix
- 1 teaspoon Ceylon cinnamon
- ⅛ teaspoon mineral salt
In a medium bowl, whisk together eggs, almond milk and coconut oil.
Add protein powder and whisk until smooth. Add entire box of grain-free waffle mix and mix until thoroughly combined with a spatula.
Plug in mini waffle iron to warm. Spray with coconut oil spray and add a bit less than a ¼ cup of batter per waffle.
Cook for 2-3 minutes until golden brown.
Serve immediately drizzled with honey and cinnamon or freeze waffles on a sheet pan.
When frozen, transfer to a silicone storage bag or ziploc. Reheat from frozen in toaster oven, air fryer or microwave.
