I have always been a blondie gal over brownies. I love the buttery vanilla batter especially with added depth from brown butter and caramel notes from dates. these grain-free brown butter date blondies are a nourishing yet decadent spin on my favorite blondies. they are also gluten-free, grain-free and refined sugar free- the perfect little treat!
the inspiration:
these are inspired by one of my favorite desserts of all time! the blondie. Cobbler and cake come in a close second and third. the base of the blondies begin with browned butter and dates and usually a nut butter for a luscious and gooey center. the depth of flavor of these are reminiscent of a snickers bar with the caramel-notes from the dates, chocolate chips, touch of salt and cashew butter.
brown butter date blondie ingredients:
- dates: add a delicious caramel and natural sweetness to the blondies. this is my favorite brand of dates.
- butter or coconut oil: browning the better adds depth and infuses the dates.
- dry ingredients: almond flour forms the base of the batter and baking soda helps it rise.
- natural sweeteners: I use coconut sugar to sweeten in this recipe.
- egg: a single egg helps provide structure.
- vanilla: you can use vanilla extract or vanilla bean paste.
how to make:
these grain-free brown butter date blondies are so simple to make! Begin by melting the butter until it’s a light brown color then add in the chopped dates to rehydrate. Let cool then simply add the wet ingredients in a large bowl, whisking thoroughly. Next, stir in the dry ingredients to combine and finish with the chocolate chips.
Press batter uniformly into an 8×8 baking pan and sprinkle with more chocolate chips then bake 18-20 minutes until golden brown and just set. enjoy!

Grain-Free Brown Butter Date Blondies
Ingredients
- ¼ cup unsalted butter (4 Tablespoons)
- ½ cup pitted dates minced finely
- ¾ cup coconut sugar
- ½ cup cashew butter
- 1 large egg
- 1 teaspoon vanilla bean paste or extract
- 1 cup almond flour
- 1 teaspoon baking soda
- ¼ teaspoon mineral salt
- ½ cup dark chocolate chips plus more to sprinkle
Instructions
- Preheat oven to 350 degrees. Line a 8x8 baking pan with parchment paper, leaving an overhang, then spray with coconut oil spray.
- To a small saucepan, begin melting butter over low heat until light brown. Stir in minced dates and let cook until a medium brown butter is achieved. Set aside to cool while preparing blondie batter.
- To a large bowl, add coconut sugar, cashew butter, egg and vanilla and whisk until well combined. With a spatula, add in cooled browned butter with dates and stir until well combined. To the wet mixture, add in almond flour, baking soda and salt. Combine well with a spatula. Stir in chocolate chips.
- Transfer batter evenly to the prepared pan, smoothing top. Sprinkle with more chocolate chips then bake on the middle rack, for 18-20 minutes, until golden brown and just puffed in the middle. Let cool for 10 minutes then slice and serve.
- Store leftovers in an airtight container in the fridge.
