school is almost out and I’m dreaming about all the summer meals! this simple dinner is an epic mashup of chicken fajitas meets sausage rolls. My son gobbled this down and asked for more. serve with some of my orange peel guacamole with your favorite tortilla chips for a fun and festive spin on hot dog night.

chicken fajita sausage roll ingredients:
here is the ingredient line up…
- chicken sausage: use what you like! you will need two packs for this recipe.
- fajita veggies: yellow onion, red bell pepper and green bell pepper.
- hot dog buns: use your favorite bakery buns or gf version.
- summer veggies: I used frozen white corn, fresh zucchini and local heirloom tomatoes with scallions and cilantro.
- store-bought taco or fajita seasoning: this one is my favorite.


how to make:
begin by warming a grill pan over medium high heat to grill the chicken sausages. alternately, you can grill outdoors. after you have achieved grill marks, set sausages aside to keep warm and add fajita veggie to the same pan to cook and caramelize. set aside. finally, add confetti veggie components to quickly saute. to assemble sausage rolls, add fajita veggies into a warmed hot dog bun followed by the chicken sausage. top with plenty of confetti veggies and enjoy!

Chicken Fajita Sausage Rolls with Confetti Veggies
Ingredients
- ½ teaspoon avocado oil
- 8 chicken sausages
- 1 teaspoon taco or fajita seasoning separated in half
- 1 cup red bell pepper sliced in strips
- 1 cup green bell pepper sliced in strips
- 1 cup yellow onion julienned thinly
- 8 hot dog buns I used GF Udi’s brand
Confetti Veggie Medley:
- ½ teaspoon avocado oil
- 1 cup fresh or frozen white corn kernels
- 1 cup zucchini diced small
- 1 clove garlic minced
- 1 cup roma tomato diced
- ¼ cup scallions sliced thin
- ¼ teaspoon mineral salt
- ¼ teaspoon taco or fajita seasoning
- 2 Tablespoons fresh cilantro minced
Instructions
- Begin by heating your grill or a large grill pan over medium high heat. When pan has heated, add avocado oil, followed by chicken sausages.
- Add 1/2 of the fajita seasoning on both sides of the sausages and grill, 2-3 minutes per side, until grill marks are achieved. Transfer to keep warm on a sheet pan.
- Turn heat down, if needed, and add peppers, onions, and remaining fajita seasoning. Saute until vegetables are softened and lightly caramelized, 3-5 minutes. Transfer fajita vegetables to sheet pan.
- Return grill pan to fire over medium heat to make the Confetti Veggie Medley.
- Add avocado oil, corn, zucchini, garlic, tomatoes, scallions, fajita seasoning and salt. Saute for 3-5 minutes until veggies are softened, but crisp tender. Fold in cilantro.
- To build sausage rolls, add fajita veggies to a warmed hot dog bun followed by a grilled chicken sausage. Top with plenty of Confetti Veggie Medley and serve!
