Begin by heating your grill or a large grill pan over medium high heat. When pan has heated, add avocado oil, followed by chicken sausages.
Add 1/2 of the fajita seasoning on both sides of the sausages and grill, 2-3 minutes per side, until grill marks are achieved. Transfer to keep warm on a sheet pan.
Turn heat down, if needed, and add peppers, onions, and remaining fajita seasoning. Saute until vegetables are softened and lightly caramelized, 3-5 minutes. Transfer fajita vegetables to sheet pan.
Return grill pan to fire over medium heat to make the Confetti Veggie Medley.
Add avocado oil, corn, zucchini, garlic, tomatoes, scallions, fajita seasoning and salt. Saute for 3-5 minutes until veggies are softened, but crisp tender. Fold in cilantro.
To build sausage rolls, add fajita veggies to a warmed hot dog bun followed by a grilled chicken sausage. Top with plenty of Confetti Veggie Medley and serve!
