Secret Ingredient Texas Caviar🫑🌶️

*before you make this, make sure you can chill it overnight or at least 406 hours- this is integral for flavors to meld and peas to absorb the vinaigrette”

yields 4-6 servings

two 15.5 oz cans black eyed peas or two pounds cooked, drained and rinsed well
1 red bell pepper, minced finely
1 fresh jalapeño or green bell pepper, minced finely
1/2 cup red onion, minced finely
1/4 cup candied jalapeños, minced (the secret)
2 Tablespoons fresh italian parsley (minced)

Vinaigrette:
In a mason jar, shake together:
1/4 cup olive oil
The juice and zest of 1 lemon
2 garlic cloves, grated on a microplane
1 Tablespoon candied jalapeno brine
1 teaspoon mineral salt
10 turns of freshly-cracked black pepper

In a large bowl, stir together all ingredients and pour vinaigrette atop. Stir well. Refrigerate ideally overnight to marinate or at least 4-6 hours, stirring occasionally.
