In my opinion, a homemade Rice Krispie treat is hard to beat. I’ve taken this nostalgic treat and added an autumn twist with a naturally-sweetened maple caramel sauce, caramelized apples, warming spices, classic marshmallows and sprouted brown rice puffs. these salted caramel apple Rice Krispies are truly a trip back to your childhood. everyone will love them and they will disappear before the halloween candy!
the inspiration:
this was my attempt to make a fall-inspired Rice Krispie treat that was made with cleaner ingredients. I started with organic sprouted brown rice cereal, along with marshmallows without hfcs, food dyes or natural flavors. pastured butter, fresh organic apples and warming spices follow next with some delicious maple syrup. after testing these treats for the first time, I couldn’t believe how delicious they were. the combination of the lightly browned butter with maple syrup and spices truly tastes like fresh caramel. the addition of the soft, warm apples set it apart.
Rice Krispie ingredients:
- sprouted brown rice crisp cereal: this is the brand I like.
- apples: the star of the show! make sure to choose a bright red exterior to keep its color after they are cooked.
- butter: the base of our marshmallow filling.
- pure maple syrup: adds an autumn-inspired natural sweetness.
- marshmallows: this is the brand I use without hfcs or food dyes. I found at Whole Foods, central market and thrive market.
- warming spices: cinnamon and nutmeg are so delicious with the browned butter and maple.
- pure vanilla extract: adds depth of flavor.
- flaky salt: the perfect finisher to the treats.
how to make:
these Rice Krispie treats are simple to make! make sure to prepare an 8×8 pan sprayed with coconut oil and lined with parchment paper with an overhang. in a dutch oven, begin by lightly browning the butter with the maple and spices. you’ll next sauté the apples until lightly softened, then add in the marshmallows to melt. off the heat, stir in the vanilla and brown rice crisps. press mixture in the greased prepared pan to chill a bit, then slice into squares and enjoy!
how to serve:
these salted caramel apple Rice Krispies are perfect served solo but also fun to serve at a party with other bites. I served them at my Autumn Tea Party alongside my pumpkin pie spiced granola & fig jam trifles, gf pigs in a blanket with truffled honey dijon, and pimiento tea sandwiches. they were such a hit!
Salted Caramel Apple Rice Krispies
Ingredients
- 8 Tablespoons butter 1 stick
- ¼ cup pure maple syrup
- large sprinkling of mineral salt
- ¼ teaspoon cinnamon
- ¼ teaspoon nutmeg plus more to garnish
- 1 cup red-skinned apples diced small
- 10 oz bag of mini marshmallows
- 1 teaspoon pure vanilla extract
- 5 cups puffed sprouted brown rice cereal
- Flaky salt to garnish
Instructions
- Begin by lining an 8x8 baking pan with parchment paper, leaving a portion of overhang. Spray with coconut oil spray.
- In a heavy-bottomed dutch oven, add the butter over medium heat and let it begin bubbling and turning light brown, 2-3 minutes. Stir in maple and spices, let bubble and simmer another 1-2 minutes. Stir in apples and saute for 2-3 minutes until apples just begin to soften. Turn heat to low.
- Stir in marshmallows over low heat until they are melted. Take off the heat and stir in vanilla and brown rice cereal. Mix well with a spatula until well combined.
- Transfer rice krispie mixture to the prepared pan, pressing mixture down firmly and smoothing top evenly. Sprinkle liberally with nutmeg all across top then chill at least 30 minutes to firm up. Cut into 12 large squares or 24 mini squares and serve. Enjoy!
