Poolside Blueberry & Grilled Corn Salad

Ingredients
  

  • 1 pint fresh blueberries washed & dried
  • 2 cups fresh corn grilled & cut off the cob
  • 1 cup english cucumber diced small
  • 1/4 cup fresh cilantro roughly chopped
  • 1 medium fresh jalapeño minced
  • 1 cup queso panela cubed small
  • 1/2 cup toasted pistachios roughly chopped
  • white corn chips for scooping

spiced honey vinaigrette:

  • 1/4 cup fresh lime juice
  • 1/4 teaspoon ground aleppo pepper plus more to sprinkle as garnish
  • 1/4 cup honey
  • 3/4 teaspoon pink himalayan salt
  • freshly ground black pepper to taste
  • 1/4 cup good olive oil

Instructions
 

  • prepare the spiced honey vinaigrette- combine lime juice, honey & spices in a small glass bowl. very slowly whisk in the olive oil to create an emulsion. set aside.
  • in a large bowl, combine all salad ingredients except the pistachios. pour atop spiced honey vinaigrette and mix gently. refrigerate at least 1 hour before serving.
  • stir in pistachios and serve chilled with a sprinkling of aleppo pepper and your favorite corn chips for dipping poolside.
