Ingredients
- 1 pint fresh blueberries washed & dried
- 2 cups fresh corn grilled & cut off the cob
- 1 cup english cucumber diced small
- 1/4 cup fresh cilantro roughly chopped
- 1 medium fresh jalapeño minced
- 1 cup queso panela cubed small
- 1/2 cup toasted pistachios roughly chopped
- white corn chips for scooping
spiced honey vinaigrette:
- 1/4 cup fresh lime juice
- 1/4 teaspoon ground aleppo pepper plus more to sprinkle as garnish
- 1/4 cup honey
- 3/4 teaspoon pink himalayan salt
- freshly ground black pepper to taste
- 1/4 cup good olive oil
Instructions
- prepare the spiced honey vinaigrette- combine lime juice, honey & spices in a small glass bowl. very slowly whisk in the olive oil to create an emulsion. set aside.
- in a large bowl, combine all salad ingredients except the pistachios. pour atop spiced honey vinaigrette and mix gently. refrigerate at least 1 hour before serving.
- stir in pistachios and serve chilled with a sprinkling of aleppo pepper and your favorite corn chips for dipping poolside.
