🥛Quit adding dairy to your scrambled eggs if you w 🥛Quit adding dairy to your scrambled eggs if you want them airy. A splash of water creates steam for fluffier eggs, dairy tastes great but weighs them down. And yes, I still cook them in butter for flavor 🧈

🔥If you’re cooking for more than two people, use the largest sauté pan you have to prevent overcrowding when browning or searing. A 12-14-inch pan is ideal. A stainless @allclad is my go to or my ceramic @caraway pan with lid.

🐟Hot pan + cold oil = your protein won’t stick

🧈Your sauces are thin because you’re afraid of fat or impatient and not reducing long enough.

🍪Your cookies would taste twice as deep if you browned the butter first. Same butter, five extra minutes, completely different cookie.

🧂Salt enhances flavors- pepper changes the flavor. They are both useful but not interchangeable.

🥣If you are a baker and not rotating your pan midway through cooking, your baked goods won’t likely cook uniformly. (Experience from cooking in hundreds of home kitchens)

🍗Boneless, skinless chicken breasts aren’t boring. Your seasoning/lack of marinade perhaps is 😜

🥕If you aren’t roasting at *at least* 400° or higher, you aren’t caramelizing.

🍠Stop using out of season produce- in season tastes so much better and costs less🤩
