Easy Paleo Sheet Pan Dinner
if you tend to have leftover roasted or grilled veggies hanging around- this is a simple recipe made for you. you can also roast the veggies fresh- pick whatever you like and build your favorite bowl!

Ingredients
- 12 oz sweet italian chicken sausage fully cooked, sliced on the bias in 1/4ths
- 2 cups *leftover* roasted root vegetables
- 1 bunch broccolini cut in half
- 1 medium zucchini diced in 1/2 inch chunks
- 1 avocado diced for serving
- a few drizzles of olive oil
- 1/4 teaspoon fennel seeds
- 1 avocado diced, for serving
- dijon sriracha and good olive oil for serving
Instructions
- arrange sausage, zucchini, broccolini and leftover roasted vegetables in “quadrants” on a lined 1/2 sheet pan.
- drizzle with olive oil, salt and pepper. add fennel seeds atop sausage and toss.
- bake at 400 degrees for 15-18 minutes, rotating pan once and tossing ingredients midway through cooking.
- serve topped with diced avocado and drizzle with condiments of your liking!
