This Poolside Pesto Pasta Salad is full of protein and summer vegetables and the perfect make-ahead lunch to serve during summer months.

I started doing this a few months back and it’s ma I started doing this a few months back and it’s made weekends so much more relaxing (and delicious)😋 Usually on a Thursday or Friday, I cook up a big double batch of taco meat- usually 2 pounds of pastured ground beef with @sietefoods taco seasoning, sautéed onion & poblano and some type of bean for added fiber. Voila 🪄Now you have endless possibilities for the weekend and easy family dinners in minutes: Some of our faves: 🌮Crispy Grain-Free Tacos with @sietefoods hard shells 🫔Easy Enchilada Casserole with jarred enchilada sauce and tortilla strips 🥙Taco Salad Bowls with fresh guacamole 🥑Nachos on organic corn chips with all the fixings Try it soon and let me know If the weekend relation increases😋
