🔥 Your pan isn’t hot enough. If food goes in and d 🔥 Your pan isn’t hot enough. If food goes in and doesn’t immediately sizzle, you’re steaming- not searing.

🥬 Overcooking vegetables is why people think they hate vegetables.

🍲Let your meal prep cool down completely before adding them to containers and covering- your food will stay fresher, crisp and more vibrant for much longer.

🫐If you keep buying berries in January and wonder why they suck, it’s because they are out of season. Buy citrus, apples and pears instead. 

🧼Your kitchen ends in chaos after cooking dinner because you 1. Aren’t pre-chopping and measuring ingredients 2. aren’t reading through the recipe before you start cooking. It’s called mise en place, (everything in its place) and it will make you a more efficient cook. 

🧊 Flash-frozen can many times be fresher than “fresh.” Especially regarding seafood, IMO.

🧂Season in layers, not just at the end.
If you only salt at the end, the flavor sits on the food instead of in it.

🧈 Butter burns. Stop cooking everything in butter alone. Use oil to cook, butter to finish. (Except in quick things like eggs)

🍗 Chicken thighs > chicken breasts for flavor and forgiveness.

🔪A dull knife is more dangerous than a sharp one. And yes- it’s slowing you down more than you think…

🧂 If your food tastes flat, it’s usually missing acid, not more salt. Lemon zest, good quality vinegar or something pickled- try that first.

🫶🏻Cooking doesn’t have to be perfect to be nourishing. Progress > performance.

If a recipe tells you to caramelize onions for les If a recipe tells you to caramelize onions for less than 45 minutes, it’s not a caramelized onion. 

If you are cooking boneless chicken breasts for more than 3 hours in a slow cooker, you will have dry chicken. 

If you cry every time you cut onions, your knife needs to be sharpened. 

Burnt garlic ruins your entire dish. Low and slow, always.

Butter isn’t the problem. Highly processed foods tend to be. Real ingredients matter, reading labels can be eye-opening and both can make a difference in how your food tastes. 

If you are washing mushrooms, you are water logging them. Wipe the tops with a damp paper towel instead. 

If you are searing a protein, make sure you rotate your pan throughout the process so you don’t get a hot spot. 

If you really want to impress guests while entertaining, chill your salad plates ahead of time. 

A simple meal made calmly is better than a perfect one made in stress. You’ve got this!💪🏻
