🫐If you keep buying berries in January and wonder why they suck, it’s because they are out of season. Buy citrus, apples and pears instead. 

🧼Your kitchen ends in chaos after cooking dinner because you 1. Aren’t pre-chopping and measuring ingredients 2. aren’t reading through the recipe before you start cooking. It’s called mise en place, (everything in its place) and it will make you a more efficient cook. 

🧊 Flash-frozen can many times be fresher than “fresh.” Especially regarding seafood, IMO.

🧂Season in layers, not just at the end.
If you only salt at the end, the flavor sits on the food instead of in it.

🧈 Butter burns. Stop cooking everything in butter alone. Use oil to cook, butter to finish. (Except in quick things like eggs)

🍗 Chicken thighs > chicken breasts for flavor and forgiveness.

🔪A dull knife is more dangerous than a sharp one. And yes- it’s slowing you down more than you think…

🧂 If your food tastes flat, it’s usually missing acid, not more salt. Lemon zest, good quality vinegar or something pickled- try that first.

🫶🏻Cooking doesn’t have to be perfect to be nourishing. Progress > performance.

5pm: DINNER
