This Gingerbread Apple Cookie Trifle is my go-to for last-minute holiday magic. It takes minutes to assemble and the hardest part is waiting for the cookies to soften while the trifle chills overnight. It’s gluten-free, grain-free, refined sugar-free and insanely easy to assemble. 

Layers of @simplemills pecan cookies, apple butter, dried fruits soaked in orange liqueur and a simple cream cheese filling make it festive, cozy and easy to make with kiddos. 

Bonus: it looks gorgeous on the table with zero stress🥮🍎 Comment RECIPE and I’ll send it over!

🌅Step outside barefoot and watch the sunset- grounding my nervous system instead of numbing it.

🧁Bake a sweet & nourishing treat with my 4YO.

☕️Make a bone broth hot chocolate or sleepy mocktail- something to sip that still feels ritualistic.

🧖‍♀️Take a hot shower with eucalyptus and put on cozy lounge clothes.

🧘🏼‍♀️Do a few minutes of gua sha and red light therapy on my neck and lower back for relaxation.

📖Journal what I’m grateful for.

💤Go to bed early and wake up clear-headed- the kind of energy no wine could ever give.

I don’t miss the glass of wine. I love who I’ve become without it.
