I know it’s a touchy subject but I feel like I can I know it’s a touchy subject but I feel like I can comment on it, because I did it. I made the choice to spend extra money on quality proteins like wild-caught fish and organic pastured chicken and use oils like olive oil and avocado oil. It was not a cheap choice, but I wasn’t going to serve something to my customers that I wouldn’t feed myself or my family. Nowadays, people are learning more about what goes into our meals and some restaurants are catching on. For me, if the restaurant spends more money and attention on the decor and exclusivity of their spot over the quality of the ingredients they are cooking with, it’s a no for me. Anyone else?
