There is zero shame in my quesadilla game. Here is There is zero shame in my quesadilla game. Here is how I make them more nourishing and a “complete” meal for my 5YO son. 

1. I start with GF tortillas made with simple ingredients that don’t fall apart. My fave is the @riseandpuff GF Tortillas made with 5 simple ingredients like avocado oil and honey.

2. Always add a protein- we do organic deli turkey with raw cheese often or add in taco seasoned beef or leftover shredded chicken.

3. Add healthy fats + fiber to the side. I always add fresh avocado or guacamole along with some fresh fruit to round out the meal. Easy peasy!

A few years ago, I could never take it or leave it A few years ago, I could never take it or leave it. Now I’m 2.5 years without alcohol after I followed this simple rule for myself. 

My therapist at the time said, “Try to avoid drinking alcohol with the hope to CHANGE your mood.” 

This hit me hard. 

So now, that’s my rule. I only drink if I’m feeling happy, relaxed or celebratory and IF I TRULY WANT ONE.

Truthfully, I’ve barely even wanted it after that realization. And I’m so thankful for the mindset shift.

Turkey Veggie Chili- the “Best Healthy Turkey Chili” recipe from @ambitiouskitchen is a similar recipe. I served with delish GF Cheddar Biscuits from @cappellos

Pizza Baked Chicken Cutlets- I made the Tie-Dye Chicken recipe from @thedefineddish and served it with @jovialfoods GF rotini with plenty of pastured butter and grated parmesan. 

Sheet Pan Beef Kofta Wraps: recipe on my website and served in our fave @riseandpuff GF tortillas. 

One-Pan BBQ Chicken & Rice: a recipe from @rachelmansfield and I used clean ingredient BBQ Sauce from @getsidedish. 

Burgers & Fries: @jesseandbens makes the best clean ingredient fries and @itsallgoodgoods_ has the most delish GF and clean-ingredient buns. 

Pizza Night: we always “fancy up” some grain-free pizzas from @cappellos. This is my Eggplant Parmesan Flatbread version from my website.
