If you’re cooking for more than two people, use th If you’re cooking for more than two people, use the largest sauté pan you have to prevent overcrowding when browning or searing. A 14-inch pan is ideal. A stainless @allclad is my go to.

Creaming butter and sugar for 2–3 minutes is rarely enough. Go 4–5 minutes, until very pale and fluffy, for lighter, airier baked goods.

Winter desserts benefit from a little bitterness. Think dark chocolate, citrus peel, espresso, burnt honey, or toasted nuts to balance sweetness.

If you want to preserve the beneficial enzymes in raw honey, don’t stir it into boiling liquids. Let the drink cool slightly, then whisk it in.

Rotate sheet pans halfway through oven cooking to prevent hot-spot browning and uneven baking.

A squeeze of citrus often wakes up winter dishes more than extra salt- especially soups, braises, greens and roasted vegetables.

Roast fennel hard, not gently. High heat caramelizes and brings out sweetness; low heat leaves it flat.

Before measuring honey, maple syrup, or nut butters, lightly grease your measuring spoon or cup so everything slides out clean.

If a recipe consistently stresses you out, it’s not your recipe. Good cooking should feel focused, not frantic.
