This Caramelized Leek, Ham & Asparagus Strata with Gruyere is a springtime entertaining showstopper perfect for brunch or a light lunch.

Quit adding dairy to your scrambled eggs if you wa Quit adding dairy to your scrambled eggs if you want them airy. A splash of water creates steam for fluffier eggs, dairy weighs them down. 

Cooking rice with a 2:1 ratio creates wet rice- use 1.5:1 ratio instead. 

Baked goods *always need salt*. It brings out the flavors in things. 

If you cook chicken to 165 degrees, you will have dry chicken. Pull it at 150ish degrees and it will continue to cook as it rests. 

If you are garnishing a dish with an herb, make sure that herb is in the dish too.

Don’t overcrowd your pan. Crowding = steaming, not searing. Give food space to brown.

Yellow onions > white onions for cooking. 

Let your steak come to room temp before cooking. Cold meat seizes up in the pan and cooks unevenly.

If you are a baker and not rotating your pan midway through cooking, your baked goods wont likely cook uniformly. 

Stop using out of season produce- in season tastes so much better and costs less🤩

Warm your tortilla- add your fillings then wrap up atop a piece of parchment. Wrap up in parchment. Slice and enjoy!

Tropical Beach Yogurt Parfaits🥝
Ingredients (makes 2):

1 cup full-fat greek yogurt
½ cup diced mango
½ cup diced kiwi
¼ cup pitted & halved rainier cherries
¼ cup grain-free granola 
2 Tablespoons toasted coconut flakes
Optional: honey, for drizzling

Instructions:
1. In a jar or lidded cup, layer yogurt, coconut, fruit, honey and granola.
2. Repeat layers & enjoy topped with a cherry duo🍒

Salted Caramel Protein Latte with @justingredients Creatine & Salted Caramel Protein, @perfectsupplements collagen and a blend of organic adaptogenic mushrooms for brain health with a tab of pastured butter and a splash of pure maple. 100/10 (I make sure to normally use an immersion blender that isn’t plastic when blending hot liquids 👍🏻)

Supplements & filtered water with @justingredients electrolytes.

11am: SNACK
Beachy Tropical Fruit Parfait (coming this week!)

1pm: LUNCH
Waterside Blackened Shrimp Tacos with Avocado, Slaw & Spicy Chipotle Sauce at @katieseafoodhouse

6pm: Family DINNER with my Dad’s side of the family
My Grapefruit Avocado Salad (on my site)
Seafood Enchiladas (homemade by my cousin Catherine) with local shrimp & crab
Scratch Stewed Black Beans & Cilantro Lime Rice
