Fig, Pear & Blackberry Chia Compote
This Fig, Pear & Blackberry Chia Compote is a delicious and versatile jam that is naturally-sweetened and full of healthy fats.
- 3 cups fresh figs cut into 6ths (about 12-15 figs)
- 1 cup pears diced small (about 1 medium pear)
- 1 cup blackberries
- ¼ cup honey
- ¼ teaspoon mineral salt
- ¼ cup chia seeds
- ¼ teaspoon nutmeg
- ½ teaspoon pure vanilla extract
- ¼ teaspoon almond extract
Add all ingredients to a small or medium heavy-bottomed pot. Cook on low heat, stirring often, for 15-20 minutes until juices have realeased, fruit has started to break down, and compote has thickened. Set aside to cool.
Serve chilled or room temperature atop greek yogurt, layered in a trifle cup with crushed gingersnaps and mascarpone, or spooned atop vanilla bean ice cream.
